Healthier Sausage Rolls with Hidden Veggies

Sausage Rolls are a very common party food that all kids love (let’s face it – we all do!) but store bought varieties often contain preservatives and have very little nutritional value.

We’ve found a quick and easy ‘healthier’ version that tastes great and the kids will love it, has hidden vegetables within and best of all, where we know the quality of the meat filling.

In this version we have used zucchini and carrots but we have previously made these with mushrooms, spinach and capsicum.

 

Ingredients

500g Heart Smart lean minced beef

1 Zucchini Рgrated  (we have also made these with diced mushrooms, capsicum and spinach)

2 Carrots – grated

1 Tbsn Tomato Sauce

4 sheets low fat frozen Puff Pastry – defrosted

 

How to Make our Healthier Sausage Rolls

Mix the grated veggies and minced meat together.

With a stick mixer, blend the meat filling until smooth to create a sausage like consistency.

Add in the tomato sauce.

Cut each sheet of puff pastry in half.

Form a line of filling down the centre of each sheet lengthwise and then roll the sheets up.

Lay the rolls onto a baking tray with the cut side down.

Cut each roll into 6 pieces.

Brush each roll with milk or an egg wash and sprinkle with poppy seeds (optional.

Bake in a moderate oven for 15-20 minutes until nicely browned.
