Chocolate Chia Seed Pudding
Chocolate Chia Seed pudding – looks and tastes delicious and is definitely a healthier version to traditional pudding. What we loved the most about this recipe was that there was no cooking required. The pudding will thicken and set overnight in the fridge.
Chia seeds offer many nutritional benefits. They are high in antioxidants, vitamins and minerals including: iron, magnesium, zinc, calcium and Omega 3 fatty acids. Chia seeds are also a very good source of dietary fibre and protein.
What you will need.
- 1 1/4 cup almond milk
- 1/4 cup cocoa powder
- 1/4 cup chia seeds
- 4 Tbsn honey
- 1/2 tspn ground cinnamon
- pinch of salt
Place all ingredients into a high speed blender and blend until smooth.
Divide the pudding between glasses or jars and refrigerate overnight (a minimum of 4 hours).
Enjoy with shaved chocolate or garnished with strawberries or mixed berries.
For a greater protein content, you could try adding a scoop of chocolate protein whey powder.
