Zucchini & Sweet Potato Zoodles

It’s Food Challenge Friday – the beginning of our journey to improved mental wellbeing by targeting nutritional health.
Have you tried Zucchini and Sweet Potato Zoodles? We have. They are delicious, a great substitute and lighter alternative for wheat pasta.
- Using a Spiralizer, spiralize 1 zucchini and 1 sweet potato.
- Sautee zoodles in a lightly oiled frypan for 4-5 minutes (al dente)
- Salt to taste and serve with your favourite pasta sauce
- Serves 2 people
