Chickpeas are a very versatile and healthy food alternative. They are a complex carbohydrate which helps to control blood sugar levels, high in protein and fibre which improves digestion and will keep you feeling fuller for longer. On top of this, they are a great source of plant-based protein and contain many essential vitamins and minerals.

We originally saw this recipe on the Cooking Light page but we have modified it to suit our taste. It was really delicious and and flavoursome and takes the humble chickpea to a whole new level.


  • Olive Oil
  • Brown onion (diced)
  • 2 bunches of Broccolini (cleaned & trimmed)
  • 2 cans Organic Chickpeas (rinsed & drained)
  • 2 tspn Paprika
  • 2 cloves Garlic (crushed)
  • Fresh Lemon Juice (1 lemon)
  • 2 tspn Dijon Mustard
  • 1/4 cup Fresh Parsley (chopped)
  • Salt & Pepper to taste


Steam broccolini in a pan with oil, half of the crushed garlic, salt and pepper. Set aside.

Heat oil in the pan and cook the diced onion until translucent. Add the 2 cans of chickpeas and paprika and stir fry until cooked through.

In a mixing jug, add the Dijon mustard, remaining garlic, lemon juice, approx 4 tablespoons of oil, chopped parsley and salt and pepper. Whisk with a fork until combined.

Add the dressing to the chickpeas and onions and stir to combine.

Serve chickpeas in a bowl and top with the steamed broccolini.

Enjoy with fresh crusty bread or a side of steamed rice.
